She Don’t Know’s Jill Trinchero Shares Her Cannabis Infused Kale Caesar Recipe

Jill Trinchero moved to Portland in 1995— after college and a year as a ski bum in Steamboat Springs, Colorado— to work in Sales and Product Development. When her daughters were born, Jill turned her focus to full-time parenting, a small handmade jewelry business and community service advocating for arts in education. Then, she went on to create She Don't Know (SDK), delicious gluten-free cannabis snacks that she created as a reminder to relax and enjoy life.

Fans of her edibles brand, VIRIDE asked Jill to share her favorite recipe using her MagicalButter MB2e machine. She gave us the Kale Caesar, a take on 'Hail Caesar.' It’s a Caesar salad made with kale instead of romaine.

“This is a well balanced Caesar salad with crunchy croutons and parmesan, garlicky but not overpowering— made hearty by the Kale— and because it's made without anchovy, it's vegetarian, which is unique,” says Jill. And, when asked about her thoughts on using the MB2e, she says, “I've been infusing oils for years and never thought it could be so quick, clean and efficient.”

Cannabis Infused Kale Caesar with Croutons

Ingredients:

Croutons

1/2 loaf crusty Italian bread

1/4 cup extra virgin olive oil

1/4 cup grated Parmesan

Salt & pepper to taste

Dressing

2 cloves garlic, smashed & peeled

2 lemons, juiced

1 TBSP water

1/2 cup magical infused olive oil

1/2 cup Parmesan

Salt & Pepper to taste

16 oz prepared kale (washed, dried, trimmed & torn into bite-sized pieces)

Make the croutons:

Preheat oven to 350 degrees. Cut bread into cubes and put them into a bowl. Add the olive oil, parmesan and season with salt & pepper. Mix ingredients well then spread the cubes onto a baking sheet and bake until they are golden brown. Let cool.

Dressing:

Put garlic, lemon juice and water into a blender and process until smooth. With the blender running pour the olive oil in slowly of the dressing to emulsify. Stir in parmesan and season with salt & pepper. Toss kale with dressing to coat using as much or as little you like. Add croutons and extra parmesan and toss again. Refrigerate remaining dressing.

Serving size: 1-2 cups

  • For a meal add protein like steak, chicken or salmon. And use gluten-free bread to make it celiac safe.
