You’ll Love Baked Smart’s Banging Blueberry Scones with Infused MagicalButter Recipe

At Viride, we love elevating elegant dishes like blueberry scones. We especially love Baked Smart’s version of this berry-licious dish, featuring cannabis infused butter made with the MagicalButter MB2e machine.

Baked Smart’s Banging Blueberry Scones with Infused MagicalButter

18 servings/scones (approximately 4mg THC per serving)

Ingredients

  • 3 cups all-purpose flour

  • 1/2 cup Baker’s sugar or castor sugar

  • 2 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 8 tablespoons frozen butter

  • 4 teaspoons of frozen MagicalButter

  • 1 cup of blueberries, divided into 1/3 cup portions

  • 1 cup buttermilk

  • 1 Tablespoon fresh lemon juice

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Cover baking sheet with parchment paper.

  2. In a large bowl, combine flour, sugar, baking powder, and baking soda.

  3. With a cheese grater, grate the frozen butter and MagicalButter into the dry mixture. Gently toss the mixture together with your hands to incorporate the butter into the flour mixture.

  4. Make a center in the middle of the dry ingredients and pour in the buttermilk and lemon juice. Mix together gently with your hands until the mixture is moistened.

  5. Press mixture together into a ball.

  6. Lay out a large piece of parchment paper and lightly flour. Place the dough ball onto the floured parchment paper and divide into three equally sized balls. Lightly flour the parchment paper again.

  7. Flatten each ball into a ½ circle.  

  8. Place 1/3 cup of blueberries on the top of each circle. Spread the blueberries evenly over the dough circle, leaving 1/2 inch edge. Fold the edges of your dough circle inward to cover the blueberries. You will now have a perfect circle of dough.

  9. Cut each dough circle into 6 wedges.  

  10. Place 9 wedges on your baking sheet and bake in over for 12-15 minutes or until golden brown.

Frosting

  • 2 cups powdered sugar

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons cold water

In a medium bowl mix 1 cup powdered sugar with 1 tablespoon of water. Slowly add 1 tablespoon of lemon juice and mix. Add the second tablespoon of water and the remaining 1 cup of powdered sugar and mix. Slowly add the last tablespoon of lemon water.  Mix well and drizzle on cooled scones.

Cannacals
